Fresh Pacific salmon is everywhere right now! I love salmon season. Where else can you get the best tasting salmon in the world than right here in the Pacific Northwest? I picked up a filet last night for dinner alone. My husband has been working out of town. So I went super healthy and light. Also this recipe is really easy!
Pan Roasted Sockeye Salmon with Chive Yogurt Sauce
filet of salmon
1 cup Greek style yogurt
1 lemon juiced
1/4 cup fresh chives
salt and pepper
- Wash and pat dry the salmon filet. Salt and pepper the flesh side.
- Mix together the yogurt, lemon juice, chives, salt, and pepper and coat 2 tablespoons on top of the flesh side of the salmon.
- Preheat oven to 450 degrees. Meanwhile on the stove top in a cast iron skillet over high heat place with a little olive oil place salmon skin side down. Cook 2 minutes. Transfer to oven and cook 5 minutes. Flip salmon to flesh side down and continue to cook 1 minute.
Serve immediately with yogurt sauce and couscous!
