Salmon with Chive Yogurt Sauce

 

Fresh Pacific salmon is everywhere right now!  I love salmon season.  Where else can you get the best tasting salmon in the world than right here in the Pacific Northwest?  I picked up a filet last night for dinner alone.  My husband has been working out of town.  So I went super healthy and light.  Also this recipe is really easy!

 

Pan Roasted Sockeye Salmon with Chive Yogurt Sauce

filet of salmon

1 cup Greek style yogurt

1 lemon juiced

1/4 cup fresh chives

salt and pepper

olive oil

 

  1.  Wash and pat dry the salmon filet. Salt and pepper the flesh side.
  2. Mix together the yogurt, lemon juice, chives, salt, and pepper and coat 2 tablespoons on top of the flesh side of the salmon.
  3. Preheat oven to 450 degrees. Meanwhile on the stove top in a cast iron skillet over high heat place with a little olive oil place salmon skin side down.  Cook 2 minutes.  Transfer to oven and cook 5 minutes.  Flip salmon to flesh side down and continue to cook 1 minute.

Serve immediately with yogurt sauce and couscous!
