Grilled Stuffed Pork Chops

I found two beautiful bone in pork chops at the grocery then headed straight to the produce department to find a fresh veggie to stuff them. I made a type of tomato and parsley salsa. I added a little sharp Tillamook cheddar cheese with minced shallots, and I had a mixture that was light and full of flavor.

Grilled Stuffed Pork Chops

2 bone in pork chops
1 cup fresh parsley
1 cup grape tomatoes
1 shallot
1 cup shredded Tillamook Sharp Cheddar Cheese
pinch of salt and pepper
olive oil



  1.  With a sharp knife butterfly each of the pork chops open leaving a pocket to stuff them. Add olive oil and salt and pepper inside and outside of the pork chop.
  2. Chop all ingredients small and mix together with salt and pepper. Stuff inside pork chops. Use a good amount. It should make the pork chop look much bigger than you started.
  3. Refrigerate for thirty minutes to let the flavors marry and the pork chops to set up.
  4. Turn grill to medium-high. Grill each pork chop 4-6 minutes per side depending on thickness.

Serve immediately with a salad and a side of pasta.
