I found two beautiful bone in pork chops at the grocery then headed straight to the produce department to find a fresh veggie to stuff them. I made a type of tomato and parsley salsa. I added a little sharp Tillamook cheddar cheese with minced shallots, and I had a mixture that was light and full of flavor.
Grilled Stuffed Pork Chops
2 bone in pork chops
1 cup fresh parsley
1 cup grape tomatoes
1 cup shredded Tillamook Sharp Cheddar Cheese
pinch of salt and pepper
- With a sharp knife butterfly each of the pork chops open leaving a pocket to stuff them. Add olive oil and salt and pepper inside and outside of the pork chop.
- Chop all ingredients small and mix together with salt and pepper. Stuff inside pork chops. Use a good amount. It should make the pork chop look much bigger than you started.
- Refrigerate for thirty minutes to let the flavors marry and the pork chops to set up.
- Turn grill to medium-high. Grill each pork chop 4-6 minutes per side depending on thickness.
Serve immediately with a salad and a side of pasta.
